Milk & Honey Elements Rye Cask Finish

The M&H Elements Rye Cask Finish is a distinctive Israeli single malt from the innovative Milk & Honey (M&H) Distillery in Tel Aviv. Part of the distillery’s Elements range, it explores how different cask types can transform M&H’s fruit-forward house style, with rye whiskey casks bringing an additional layer of spice, toasted grain and oak complexity.

M&H matures its whisky in Israel’s hot Mediterranean climate, where interaction between spirit and oak occurs particularly rapidly. The distillery has experimented extensively with casks ranging from bourbon and Israeli wine to sherry, Islay and rye whiskey barrels.

The Rye Cask expression combines M&H’s characteristic orchard fruit, honey and vanilla character with the more assertive spice associated with rye casks, resulting in a whisky that sits somewhere between elegant single malt and spicy American whiskey.

Tasting Notes

Colour: Warm gold with rich amber highlights.

Nose: Fresh and expressive, with aromas of green apple, pear and citrus layered with vanilla, honey and toasted cereal. The rye cask influence introduces cracked pepper, cinnamon and a subtle herbal character.

Palate: Rich and lively. Honeyed malt and vanilla sweetness lead into ripe orchard fruit before developing into rye bread, cinnamon, black pepper and warming baking spices. Toasted oak and caramel provide richness, while a gentle herbal edge keeps the whisky fresh and complex.

Finish: Medium to long, warming and increasingly spicy, with lingering vanilla, toasted grain, cinnamon, pepper and sweet oak.
