Soju is Korea's national spirit: clean and gentle, traditionally served chilled in small glasses with food. Flavoured sojus such as peach, grapefruit, green grape and plum are lighter and fruitier, and brilliant in cocktails or simply over ice. Sake is brewed from polished rice and ranges from crisp and dry to rich and fragrant; serve it chilled or gently warmed depending on the style.
