Krone Borealis Cuvée Brut

Traditional grape varieties of pinot noir and chardonnay are harvested in the cool of the night. Krone Borealis is bottle-fermented and then matures on the lees in the underground cellar.

On the palate bubbles like silk, featherweight and buoyant, languidly wrap around winter melon, white peach, fresh pineapple. Wet crystal acidity, limpid and mineral, unwinds along seams of coiled light. Extended lees time (18 months) and a lower level of tirage layers on autolytic biscuity intensity, the satiny mousse ribboning to mineral austerity.
