Pinot Noir from the Côte de Beaune, sourced only from the walled Clos des Ursulines, a monopole of Domaine du Pavillon at the southern tip of Pommard near Volnay.

Calcareous clay with white marls gives structure and depth. Hand-picked and carefully fermented in the Burgundian tradition.
